The best flour to use with an Ooni Pizza Oven is Caputo Pizzeria Flour, also known as the Blue Bag. This flour is specifically made for ovens that reach temperatures higher than 700F.
A flour with elastic, resistant gluten and protein resulting in a long-rise dough. Ideal for classic Neapolitan pizza made in high heat wood fired, gas or electric ovens in high temperatures over 700 degrees F.
What Kind of Dough Should I Use for Ooni Pizza Oven?
Because the Ooni ovens cook the pizza so fast, you may want to use low-hydration pizza dough. The low water content will help to get a crispy but bready crust. Hydration of 55% will work best for this kind of oven; however, you can constantly adjust it to your taste.
