Our Opinion
As soon as we unboxed the Ooni Koda 16, it was clearly of superior quality. There is absolutely no setup required, and the instructions were straightforward.
It took a little time to perfect our pizza due to the size and extreme temperature, as we are used to making pizza in much larger pizza ovens.
The Ooni Koda 16 is a little heavy, weighing around 40lbs, but we didn’t struggle moving it around, and its compact size made it easy to store after use, although its sleek and versatile design isn’t at all an eyesore if you prefer to leave it out.
We were ready to roll once we mastered one of the recipes provided on the Ooni website.
We just had to unfold the legs and connect the hose to our propane tank, and thanks to the extreme heat and quick cook time, we had delicious pizza right from our backyard in about a minute.

The Ooni Koda 16 was first launched in March of 2020 by the married couple Kristian Tapaninaho and Darina Garland.
However, it wasn’t the first pizza oven this duo designed.
Kristian was desperate to design a pizza oven to make fantastic pizza without paying the take-out price.
After much trial and error, hard work, and perseverance, he developed his first portable wood-fired pizza oven in 2012, constructed straight from his backyard.
The couple decided they needed to share their product with the world and quickly gathered a team of professionals from manufacturing and expanding the Ooni product line, introducing more ovens and accessories to the public.

How to Assemble the Ooni Koda 16
As mentioned earlier in this article, minimal assembly is required for the Ooni Koda 16. This pizza oven comes pretty much completely straight from the box.
Once you open the box and remove the oven, all you have to do is remove the packaging, unfold the legs, and connect the hose to your propane tank; no tools are required.
Yes, it’s that easy.
First Time Set-Up
Setting up the Ooni Koda 16 oven is super easy, and it takes less than 5 minutes. All you have to do is:
- Take it out of the box
- Fold-out the legs
- Place the pizza stone in place
- Hook up the gas tank (not included) to the gas hose.
Note: The Ooni Koda 16 is ready to use with a 10 or 20-lb gas tank. If you wish to connect it to a 1lb propane (Camping Gas Tank), you need an adapter. You will need a natural gas conversion kit if you have a natural gas source.

2. Pizza Peel
Why You Need a Pizza Peel?
You need a pizza peel to transfer the pizza in and out of the oven. You may also like to have a turning peel to rotate the pizza while it’s cooking.
We recommend using a metal peel because a wood peel may easily burn with the intense heat of the Ooni Koda.
Another consideration is whether to choose a full-metal or a perforated peel. We recommended using a perforated peel because any excess flour will go through the holes of the peel and not into the oven. Any excess flour that gets into the oven will burn immediately.
A perforated peel will make the pizza oven cleaning easier. Less mess, less cleaning!
3. Infrared Thermometer

You will also need an infrared thermometer to check the oven’s temperature, particularly the pizza stone’s temperature.
Note the pizza stone will have different temperatures depending on how close the flame is.
Failure to use a thermometer can result in a burnt or underbaked crust.
While cooking the pizza, you should check how the crust is browning during baking.
Having an infrared thermometer that can read the braking surface’s temperature instantly will make the baking process a lot easier.
4. Oven Brush

Temperature Control
We think temperature control is the most important feature of the Ooni Koda 16.
Why?
You get total control of the cooking temperature. If you think 950F is too high of a temperature for your pizza, as it might cook faster on the top than on the bottom, you can lower or increase the temperature with the temperature knob as you desire.
Being able to control temperature is not something you can easily accomplish with any other fuel source.
L-Shaped Burner
The burner in the Ooni Koda 16 is shaped in an L form, which means they run down two of the oven’s walls. The rear and left sides of the pizza oven. This allows the oven to heat up faster and bake the pizza more evenly.
The Ooni Koda 16 is the only pizza oven from Ooni that has this feature. For example, the Ooni Koda 12 only has the back portion of the burner.
As you can see in the above illustration, different areas of the pizza stone are at different temperatures as the burner is on. With the help of an infrared thermometer, you can check the difference in temperature and heat distribution.
Accordingly, just like you would do in a wood-fired oven, you must rotate the pizza since it is hotter and closer to the heat source.
However, unlike most other pizza ovens with only back burners, you won’t have to turn the pizza as often.
While pizza is the most popular item to place inside this oven, it isn’t the only one.
You can make fabulous flamed cook fish, steaks, and vegetables, too, quickly controlling the temperature of your cooker with a simple dial.
Baking Pizza in the Ooni Koda 16
At first, baking pizza in the Ooni Koda, 16 can be challenging for any pizza baker. The increased temperature and the limited space play a significant role in your success.
To become a PRO baking pizza in your Ooni Koda 16, you can use some tricks and tips to bake the perfect pizza.

- Allow your Ooni Koda 16 to fully come to temperature.
- Keep the Ooni 16 Koda away from wind rafts.

How to Extinguish this Pizza Oven (Shutting it Off)
Turning the Ooni Koda 16 pizza oven off is more straightforward, if not more accessible, than turning it on.
All you have to do is turn the gas knob back to the off position. As long as the gas is fully turned off, no gas should leak from the oven.
What We Like About the Ooni Koda 16 (And What We Don’t)
The Ooni Koda 16 is a great outdoor pizza oven using innovative technology and cooking techniques to create a professional-style pizza from your home.
The Ooni Koda 16 is a durable product with an insulated, powder-coated carbon steel shell, ensuring quality and a safe experience.
We love how quickly this oven cooks a pizza, how crispy the crust is when it comes off the stone, and how versatile the design fits into every household decor.
The stone and oven are easy to clean and use and require little assembly (although it does come with a manual.)
What We Don’t Like about the Ooni Koda 16
While we have little to complain about, there are a few things we didn’t particularly care for when purchasing/using this product.
First, it is much heavier than some other Ooni ovens and other backyard ovens on the market. While it is transportable, there are other options for taking your pizza cooker camping or vacationing.
We were also slightly turned off after discovering the heat gauge was not included. While you can set this bad boy to 950°F, there is no way to tell it gets that hot unless you purchase a temperature gauge or a thermometer.
The only flaw we have to note about the Ooni Koda 16 is that it does not have a door like the Ooni Karu 16. A door would allow the pizza stone to retain its heat better.
But the Ooni Karu does have a chimney to allow the pizza oven to extract the excess heat and smoke from the charcoal or wood pellets. A chimney is something that we don’t particularly are fond of, as it needs extra cleaning.
But why the Ooni Koda 16 does not have a door?
Of course, there is a reason for that, ventilation.
There has to be a way to extract the extreme heat from the inside of the oven, and not having a door solves that problem.
However, since the opening or (mouth) of the Ooni Koda 16 is so big it allows the pizza stone to cool faster, particularly if you place the oven near wind rafts or if you live in cold weather.
If the stone cannot retain the heat due to wind or cold weather, then the pizza crust cooks slower than the top of the pizza, which may result in a soggy bottom or a burnt top.
We found that the solution for this situation is to reduce the oven temperature to around 650 to 700F and cook the pizza for an extra minute. Note the decreased flames from the photo on the left to the photo on the right.
We easily managed to control the temperature, and Voila! You got yourself the perfect pizza!
Without a gas knob, you cannot control the temperature as easily as possible with the Ooni Koda 16. Controlling the temperature in a wood, pellet, or charcoal oven is a real challenge.
But the Ooni Koda 16 makes your life really easy in that sense, which is why we recommend it so much.
Lastly, getting your hands on one of these ovens may be a little tricky because they are so popular that they are sometimes sold out.
